BUTTERMILK PANCAKES 
2 1/2 c. flour
1 tbsp. plus 1 tsp. baking powder
1 tsp. baking soda
2 tbsp. sugar
1 tsp. salt
2 beaten eggs
3 c. buttermilk
1/4 c. cooking oil

Sift together all dry ingredients. Combine egg, milk, and oil; add to dry ingredients stirring until flour is moistened. Batter will be thick. Bake on hot griddle. Makes about 24 silver dollar size or 16 4-inch pancakes.
