CHICKEN FIL GUMBO | |
4 to 6 pieces chicken 2 onions, chopped 1 tsp. garlic, minced 1/2 bell pepper, chopped 2 chicken bouillon cubes onion tops, chopped parsley flakes 1/4 tsp. cayenne pepper 1 c. cooking oil 1 c. flour (all-purpose) 1 link of sausage, cut up Put cooking oil in heavy pot. Heat up, then add the flour. Brown flour and oil together until brown (the color your want the gumbo), then add the onions. Cook until tender, then add your bell peppers. Add your chicken and cook about 10 to 15 minutes. Fill pot with water and add the rest of our seasoning to the pot. Add the sausage if you wanted at this time. When gumbo is cooked and the sauce is like you want it, add the fil. Serve with hot rice and potato salad. |
