HAM AND EGG CASSEROLE 
2 doz. beaten eggs
3 green peppers, chopped
2 cans drained stewed tomatoes
2-3 lb. ham, cubed
1 stick butter, melted
2 lb. Velveeta cheese, chopped in cubes
8 oz. sour cream
2 (4 oz.) cans sliced mushrooms, drained (optional)

Mix all ingredients together in large bowl. Pour into two 13 x 9 inch casseroles, sprayed with Pam. Bake at 350 degrees for about 45 minutes. Recipe can easily be halved, or partially bake one casserole and freeze.
