SCALLOPS VERA CRUZ 
1/4 c. olive oil
1 c. chopped onion
3/4 c. chopped green pepper
1 tsp. minced garlic
2 bay leaves
2 tsp. BLAIR fine herb seasoning
2 tsp. BLAIR Italian seasoning
1 tsp. BLAIR chili powder
1 tsp. BLAIR black pepper
4 c. chopped tomatoes
1 c. tomato sauce
2 oz. tomato paste
1/2 c. sliced black olives
1 1/2 lbs. scallops

Heat oil in stock pot over medium heat. Add onion, pepper and garlic and saute until soft. Add all ingredients except for the scallops and stir well. Increase heat and bring to a boil, stirring frequently. Reduce heat to low, add scallops, cover and simmer 20 to 30 minutes, stirring occasionally until scallops are done. Serve over steamed rice.
