4 lg. heads cabbage, coarsely chopped 1/2 bushel green tomatoes, chopped 5 lb. onions, chopped 3 to 4 lb. hot pepper, chopped 8 c. white vinegar 8 c. water 7 c. sugar 2 tbsp. salt Pickling spice IN large canner combine vinegar, water, sugar and salt. Tie pickling spice in cheese cloth at this point and place in canner. Keep spice submerged during cooking process. Add onions and pepper. Bring to a boil and add tomatoes. Bring to another boil and gradually start adding cabbage. Cook until done but not overcooked. |
