2 c. flour 1/4 tsp. salt 1 tsp. baking soda 1 tsp. cinnamon Sift these dry ingredients together. 1/4 c. honey 1 c. sugar Stir these moist ingredients together. Add the 2 mixtures together, alternately, stirring by hand to blend. In a small dish, beat 1 egg, with a fork just enough to mix. Add to dough and stir. Stir 1/2 cup chopped nuts into dough. Oil a jelly roll sized pan. Place dough into pan. Spread with slightly dampened hands. It will appear very thin if spread correctly. Bake at 350 degrees for 15 to 20 minutes. You can tell when it is done after dough rises, falls, and turns a golden brown. GLAZE: 1 1/2 tbsp. mayonnaise 1 c. sifted powdered sugar 1/2 tsp. vanilla 1 tbsp. water (or enough to form a thick syrup consistency) Spread over warm baked cookies. Let them cool; slice. These cookies keep FOREVER in a closed container. |
