RANCH BEEF LOAF 
1 1/2 c. soft bread crumbs
3/4 c. milk
2 lbs. ground beef
2 tsp. salt
1/8 tsp. pepper
1 med. carrot, peeled and grated
1 sm. onion, peeled and minced
2 eggs, beaten
1/4 c. ketchup
3 tbsp. brown sugar
2 tbsp. prepared mustard

Heat oven to 325 degrees. Put the bread crumbs in a large bowl and pour the milk over them. Stir in the ground beef, salt, pepper, grated carrot, onion, and beaten eggs. Mix thoroughly with a spoon or fork. Lightly shape the meat loaf mixture with your hands to make an oval loaf. Put it in a shallow baking pan, such as a 13 x 9 x 2 inch. Gently smooth the loaf to make it even and neatly shaped. Mix the ketchup, brown sugar, and mustard; spread it over the top of loaf. Bake it 1 1/2 hours. Remove from pan. Slice to serve. Makes 8 servings.
