POTATO CASSEROLE ALA CONNECTICUT 
6 med. potatoes, par boiled & cubed
1/4 lb. American cheese (I use white)
1/2 sm. jar diced pimiento
1 sm. green pepper, diced fine
1 med. onion, diced fine
1/2 slice white bread, torn into sm. pieces
3/4 stick melted butter
1 tsp. salt
1/2 tsp. garlic salt
1/2 tsp. celery salt
1 tsp. parsley flakes
1 c. milk

Cut cold potatoes in cubes. Place in mixing bowl and add spices, onion, pepper and pimiento and mix. Spread mixture into 9"x13" greased pan. Tear cheese and bread into small pieces and spread over top. Toss and pour melted butter over top. Bake in 350 degree oven for 1 hour, uncovered. Serves 6.
