FRANKFURTER - CABBAGE CASSEROLE 
1 sm. head cabbage
Salt
1/4 c. butter
1/4 c. flour
1 tbsp. mustard
2 1/2 c. milk
Pepper
1 lb. frankfurters, cut in 1 inch diagonal pieces
1 c. shredded cheddar cheese
2 tbsp. fine dry bread crumbs

Cut cabbage in quarters and remove core. Cut wedges crosswise in 1/4 inch shreds. Cook, covered for 6 minutes or until tender; drain. Melt butter and blend in flour and mustard. Gradually add milk and cook, stirring until smooth and thickened. Season to taste with salt and pepper. Put half the cabbage in greased 13 x 9 x 2 inch baking dish. Add frankfurters and remaining cabbage. Pour sauce over and sprinkle with cheese and bread crumbs. Bake at 350 degrees for 30 minutes.
