GRANDPA'S ETOUFEE 
1 c. (2 sticks) butter, melted
1 medium onion, chopped fine
1/2 c. bell pepper, chopped fine
1/2 c. celery, chopped fine
1 lb. shrimp
1 tbsp. cornstarch
1/2 c. water
cheese, grated
onion tops & parsley
salt and pepper, to taste

Melt butter in skillet. Add onion, pepper and celery; sauté until tender. Add shrimp; cook 20 to 25 minutes. Mix cornstarch with water and add mixture slowly, while stirring. Add cheese, onion tops and parsley. If gravy is too thick, add water slowly. Season to taste (salt and pepper).
