CRISPY BREADED TOMATOES 
green tomatoes
milk and egg mixture
1 c. each flour and bread crumbs
2 to 3 tbsp. butter
Mozzarella cheese

Slice green tomatoes as desired thickness. Roll tomato slices in a milk and egg mixture. Make a mixture of flour and bread crumbs. Then roll the tomatoes in flour mixture. In a large skillet, heat butter. Add tomatoes and cook, covered, until brown. Uncover pan and turn tomatoes. (Add more butter, if needed.) Lay a piece of Mozzarella cheese over each tomato and cover pan. Cook until cheese is melted.
