ZIPPY ZUCCHINI BAKE 
1/4 c. grated Parmesan cheese
8 oz. sweet Italian sausage
1/2 c. chopped green pepper
1/2 c. chopped onion
3 c. zucchini, sliced 1/2" thick
2 (8 oz.) cans pizza sauce
3 c. hot cooked rice
1 c. (4 oz.) shredded Mozzarella cheese

Cook sausage, green pepper and onion in a skillet until brown and crumbly. Remove from skillet and set aside. Saute zucchini in drippings in skillet until tender crisp, about 5 minutes. Combine 1 can pizza sauce with the rice and sausage mixture. Place in 2 quart rectangular baking dish. Arrange zucchini slices over top. Sprinkle with 1/2 of the Mozzarella cheese and all Parmesan cheese. Spoon second can of sauce over cheese.

Bake, covered with foil at 350 degrees for 20 minutes. Add remaining Mozzarella cheese. Bake, uncovered until cheese melts.
