RHUBARB CUSTARD PIE 
5 c. sliced rhubarb
1 c. sugar
2 eggs
1 c. Half and Half
1 tsp. vanilla
1 (10 in.) single pie crust

Cook rhubarb and sugar in covered sauce pan over low heat until tender, cool and refrigerate. Beat eggs, vanilla in cream, sit into rhubarb. Spoon into pie shell, Bake in 400 degree oven for 25 minutes, then for 10 to 15 minutes at 350 degrees.
