FRUIT COCKTAIL CARROT CAKE 
2 c. flour
1 c. sugar
2 tsp. baking soda
1 1/2 tsp. cinnamon
1/2 tsp. allspice or nutmeg
1 (30 oz.) can drained fruit cocktail
1/4 c. vegetable oil
3 eggs
2 c. grated carrots (2 carrots)
1 c. chopped nuts

Mix dry ingredients. Reserve 3/4 cup fruit cocktail for garnish. Stir in fruit cocktail, coating each piece with flour mixture. Stir in rest of ingredients. Place in greased and floured 13"x9" pan. Bake 40 to 45 minutes at 350 degrees.

CREAM CHEESE FROSTING:

1 lb. powdered sugar
8 oz. cream cheese
1/4 c. softened butter
2 tsp. vanilla
1/2 c. chopped nuts

Beat ingredients together. Spread on cooled cake. Top with cocktail. Serves 12.
