ANY DAY POTATO SALAD 
6 potatoes
1/2 c. chopped celery
1/2 c. sweet pickle relish
1/4 c. onion, chopped
1/4 c. vinegar
2 tbsp. sugar
1 tsp. salt
1/4 tsp. pepper
3/4 c. mayonnaise
1 tbsp. mustard
2 hard-cooked eggs, chopped

Boil potatoes until tender. Cool to room temperature. Peel and cube. Add celery, pickle relish, onion, hard-cooked egg, salt and pepper. Toss lightly.

Mix mayonnaise, vinegar, sugar, mustard. Taste for desired tartness. Add to potatoes. Toss lightly. Refrigerate 4 hours before serving. Enjoy.
