MONTREAL QUICHE LORRAINE 
10 slices fried bacon
1 (9-inch) unbaked pie shell
3 oz. sliced Swiss cheese
1 tbsp. flour
1/4 tsp. salt
1/8 tsp. pepper
1 2/3 c. undiluted evaporated milk
4 beaten eggs
1 tbsp. grated onion

Crumble 6 slices fried bacon in unbaked pie shell. Cover with cheese slices. Combine flour and seasonings and gradually add evaporated milk. Add beaten eggs to milk mixture and blend well. Stir in grated onion. Pour into pie shell. Bake in hot oven (400 degrees) 25-30 minutes or until knife inserted comes out clean. Garnish with remaining bacon slices. Serve hot.
