BROCCOLI CAULIFLOWER CASSEROLE 
2 boxes frozen broccoli
2 boxes frozen cauliflower
3/4 lb. Velveeta cheese
1 stick butter
1 tube Ritz crackers

Cook broccoli and cauliflower as directed, slightly undercook so it's not mushy. Drain well. Gently squeeze the vegetables until as much moisture is removed. Cut flowers off stems. Place stems in bottom of casserole dish. Arrange cauliflower on top of broccoli stems. Place broccoli flowers in amongst the cauliflower.

Cut Velveeta into cubes and melt cheese along with 1/2 stick of butter. Pour over broccoli and cauliflower. Crush Ritz crackers into crumbs. Melt the other 1/2 stick of butter and toss into crumbs. Sprinkle crumbs over top of casserole. Bake uncovered at 350 degrees for 20 minutes or until warm throughout.
