COWBOY CASSEROLE 
1 lb. ground beef (or ground turkey)
1 small onion, chopped
1 green pepper, chopped
1 (15 oz.) can enchilada sauce
1 (15 oz.) can diced tomatoes (Hunts)
1 cup rice (not instant)
chili powder, to taste
salt and pepper, to taste

TOPPING:

flour tortillas
2 cups shredded cheddar cheese

Preheat oven to 350°F.

Brown ground beef, then add onion, green pepper, enchilada sauce, diced tomatoes, rice, chili powder to taste, salt and pepper. Bring to a boil.

Transfer to a casserole dish, cover, and bake at 350°F for 45 minutes.

Remove from oven. Tear tortillas into small pieces and cover the top of the casserole. Top with cheddar cheese.

Return to oven, uncovered, for 15 minutes or until cheese is melted.
