SHRIMP CORNBREAD | |
2 eggs 1/3 c. oil 1 c. white cornmeal 1 tsp. salt 1/2 c. onions, chopped 1 (16 oz.) can cream corn 1/2 c. cheddar cheese, grated 1/2 tsp. baking soda 1-2 c. raw shrimp (May add chopped jalapeno peppers to taste) Combine eggs, corn and oil. Add cheese and mix. Stir in corn meal, baking soda and salt. Add shrimp, onions, jalapeno peppers and mix. Bake at 350 degrees for 45 minutes in greased 9x12 pan. Yield: 24 (2-inch) squares. |
