BANANA BREAD 
1 c. sugar minus 1 tbsp.
1/4 c. Parkay Spread butter
1/4 c. Canola or olive oil
1 carton Scramblers (equals 2 eggs)
3 very ripe bananas
1/2 c. all-purpose flour
1/4 c. wheat flour
1 1/4 c. oat bran (flaky kind is better)
1 tsp. baking soda dissolved in 1 tbsp. water
1/2 tsp. salt (optional)
1 c. chopped walnuts or pecans (optional)

Blend together sugar, butter, oil, and Eggbeaters with mixer on medium speed. Then mix well. Stir in mashed bananas. Add soda/water mixture, then remaining dry ingredients and nuts. Mix only until blended.

Pour into loaf pan sprayed with PAM or other baking spray. Bake in preheated oven at 325 degrees for 1 hour. Let stand for 5 minutes, then remove from pan.
