ZUCCHINI BREAD 
3 eggs
2 c. sugar
3 c. flour
4 to 5 tsp. cinnamon
1/2 tsp. baking powder
1 tsp. vanilla
1/8 tsp. ginger
1/8 tsp. nutmeg
1/8 tsp. ginger
1 c. oil
2 c. zucchini, grated fine
1 tsp. salt
1 tsp. baking soda

Blend all ingredients. Pour into 2 greased loaf pans.

Bake at 325°F for 1 hour. Cool; remove from pans.
