SAN JOSE QUICHE 
Corn chips
1 lb. hamburger
1 clove minced garlic
1 med. green pepper, chopped
1 med. onion, chopped
1/2 can green chili salsa or 1 (8 oz.) can of tomato sauce
1 tsp. each oregano and cumin
2 tsp. chili powder
2 c. grated cheddar cheese
6 eggs
1 1/2 c. milk

Arrange corn chips on bottom of 9 x 13 casserole dish. Cook beef until crumbly. Season with salt and pepper. Add onion, garlic and green pepper. Cook 5 minutes. Stir in salsa, oregano, cumin and chili powder. Top corn chips with half of meat mixture, half of cheese, then repeat with another layer of meat and cheese. Beat, together eggs and milk. Pour over meat and cheese. Sprinkle with more corn chips around the edge. Bake at 350 degrees for 40 minutes.
