OYSTER JAMBALAYA | |
3 tbsp. fat 1 tbsp. flour 1 1/2 c. onions, minced 1 clove garlic, minced 1 c. green pepper, chopped fine 1/4 c. celery, chopped 1/2 lb. ground pork 1/2 lb. ground veal 3 doz. oysters 2 tsp. salt Black & red pepper to taste 1/4 c. parsley, minced 1/4 c. green onion tops, minced 2 c. hot cooked rice Heat fat, add flour and cook to golden brown. Add onion, garlic, green pepper and celery; cook slowly until soft, stirring often. Add pork, veal and cook until brown, about 10 minutes. Drain oysters and add the liquid to mixture; cook 5 minutes. Add oysters, salt and pepper, parsley and onion tops. Continue cooking on medium heat until edges of oysters begin to curl. Stir in rice. This is best if dish can be kept hot for an hour to let flavors blend. Yield: 8 servings. |
