MUFFIN CHEESECAKES 
2 (8 oz.) pkgs. cream cheese, softened
3/4 c. sugar
2 eggs
1 tbsp. lemon juice
Vanilla wafers
Cherry pie filling

In bottom of muffin liners, place vanilla wafer. Mix cream cheese, sugar, eggs and lemon juice until light and fluffy. Put a small amount on top of vanilla wafer in each cup. Bake at 375 degrees for 18 to 20 minutes. Cool and top with cherry pie filling.
