ZUCCHINI BREAD - 2 loaves 
3 eggs
2 c. sugar
1 c. oil
2 c. grated zucchini (do not peel first)
1 tbsp. vanilla
3 c. flour
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
1 c. coarsely chopped nuts, optional

Beat first 3 ingredients. Add zucchini and mix. Add flour that has been sifted with salt and spices. Bake in two 9 x 5 x 3 inch pans at 350 degrees, 1 hour or until toothpick comes out clean.

Got tons of zucchini from your garden and don't know what to do with it? Grate it and freeze it 2 cups at a time in Ziplock bags. Now you can make zucchini bread this winter.
