FRENCH OVEN BEEF STEW 
2 lbs. beef stewing meat, 1 1/2" cubes
2 med. onions, cut in eighths
3 stalks celery, cut in lg. pieces
4 carrots, cut in eighths or fourths
1 c. tomato juice
1/3 c. quick cooking tapioca
4 potatoes, cut in chunks
1 tbsp. salt
1/4 tsp. pepper

Combine beef and vegetables (except potatoes) in 2 1/2 quart casserole. Combine tomato juice and tapioca (1 tablespoon sugar if desired). Salt and pepper and pour over meat and vegetables. Cover and bake for 2 1/2 hours at 300 degrees. Add potatoes and bake 1 hour longer. Stir occasionally.
