QUICHE 
10 inch unbaked pie crust
4 tbsp. butter
1 lg. onion, sliced
1 c. mushrooms, sliced
1 c. broccoli flowerettes (raw)
1 c. Swiss cheese, grated
4 eggs
1/3 c. Gruyere cheese, grated
1 1/3 c. heavy cream (or half & half or 2% milk)
Pinch of cayenne pepper
Black pepper to taste

Preheat oven to 425 degrees. Saute onions in butter. Add mushrooms and cook 10 minutes. Blend eggs, cream, and all seasonings. Place the mushroom mixture into pie shell. Add broccoli, then Swiss cheese. Pour in egg mixture. Top with Gruyere. Bake 10 minutes. Lower oven to 325 degrees; bake 25 minutes.
