CHICKEN AND BROCCOLI SUPREME 
1/3 box buttery crackers, crushed
2 boxes frozen chopped broccoli, cooked & drained
4 c. chicken, cooked & chopped
1/4 lb. Velveeta cheese, cubed
1 sm. can mushrooms
2 c. chicken broth

Place half the cracker crumbs in greased casserole. Add broccoli and chicken. Heat remaining ingredients in saucepan until cheese melts, stirring constantly. Pour over casserole. Top with remaining cracker crumbs. Bake at 350 degrees for 30 minutes or until bubbly.

Can be used in a crock pot using chicken flavored rice (following the directions on box, except no need to brown rice). Leave out crackers and chicken broth as the water added for the rice will be enough.
