GINGER CAKE 
1 c. sugar
2 tsp. cinnamon
1/2 tsp. salt
1 c. molasses
2 tsp. vanilla
2 1/2 c. flour
2 tsp. ginger
1 tsp. baking soda
1 c. shortening
3 eggs
1 1/2 c. boiling water

Do not use mixer. Mix by hand. Mix well sugar, eggs, shortening, cinnamon, ginger, vanilla and salt. Add flour and soda. Add boiling hot water last. Grease and flour 9"x13" pan, at 375 degrees for 30 minutes. This recipe may be cut in half using 2 eggs instead of 3 and baking in a loaf pan. Serve with Cool Whip or brown sugar frosting.
