COMPANY CASSEROLE | |
1 pkg. (6 oz.) UNCLE BEN'S® Long Grain & Wild Rice 1 pkg. frozen chopped broccoli Chicken (cooked and cubed) 1 can (4 oz.) sliced mushrooms (drained) 1 c. sharp Cheddar cheese, cubed 1 c. cream of celery soup 1 c. mayonnaise (not salad dressing) 2 tsp. prepared mustard 1/2 tsp. curry 1/4 c. Parmesan cheese 1 can water chestnuts Cook rice and broccoli according to package directions. Spread rice in bottom of a greased 13x9 pan. Top with broccoli, then chicken, mushrooms, cheese and water chestnuts. Blend soup, mayonnaise, mustard and curry. Spread over the top. Sprinkle with Parmesan cheese. Bake at 350 degrees for 45 minutes. Let stand a few minutes. Cut into squares and serve. (I also use turkey in place of chicken.) |
