ZUCCHINI BREAD 
3 eggs
2 c. sugar
2 c. peeled & grated zucchini squash
1 tsp. vanilla
1 c. oil
1 c. chopped nuts
1 c. raisins
2 c. plain flour
1 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. salt

Sift together; flour, soda, cinnamon, and salt.

Beat eggs until fluffy. Add sugar, vanilla and oil. Beat until creamy. Stir in flour. Mix zucchini, nuts and raisins. Mix all ingredients together. Pour in lightly greased loaf pans and bake for 1 hour at 352°F until golden brown and done.

Let cool in loaf pans before turning out onto rack.

Makes 2 regular size loaf pans.
