BEEF LIVER/ONIONS TO GRAVY 
4 slices of beef liver
1/4 tsp. salt
1/4 tsp. black pepper
1/3 tsp. unseasoned meat tenderizer
1 onion, sliced
1/3 c. vegetable oil
1/4 c. flour
1 1/2 c. water

Place oil in 8 inch skillet. Fry liver on both sides for 5 to 7 minutes on medium heat. Remove liver from skillet and set aside. Then add flour to skillet and stir continually until brown. Add water and onions then bring to a boil. Add liver and simmer for 20 minutes.

I fried a thick piece of bacon. Removed bacon. Fried liver in bacon drippings. Added flour. Made paste. Added water and made gravy. Put liver bacon and onions in and simmered for 20 minutes. Served over white rice. YUM!

I'm gonna try this recipe but I'll be soaking the liver in milk before cooking it and I'll try to cook it bacon grease. Thanx for the tips and recipe.

VARIATION on this... you won't believe it!! After you've added the flour (in orig. recipe), & stirred, add water (a little at a time), till it looks the texture of thin pancake batter. Set aside. Butter a Pyrex or Casserole dish, add sliced onion & TWO TABLESPOONS Ketchup. Yes, KETCHUP!! Sounds weird, I know. Then set the Fried Liver on top of the onion ketchup mixture, & cover entirely w/the thin, bland white country gravy. Salt & pepper to taste. Bake at 350°F for ONE hour, COVERED. After an hour, you'll be pleasantly surprised by the rich, dark, gravy & tender liver pieces. YUM!! People who don't normally like liver, like this recipe. My Mom always served this w/homemade Scalloped Potatoes(put them in oven HALF hour ahead of liver, same temp), sweetened, creamed corn. Delish!!
