CHICKEN PILAU 
1 fryer, cut up
2 c. rice
4 c. water
1 1/2 onions, cut up
1/2 bell pepper
1 datil pepper (optional)
1 can tomatoes
1 sm. can tomato sauce
1 tbsp. dried parsley
1 tbsp. thyme
Salt and pepper to taste
1 tbsp. Italiano seasoning

Lightly brown onion and bell pepper in a little oil. Next add tomatoes and cook down a little. Add chicken pieces and cook about 15 minutes. Add water and seasonings. Cook 1/2 hour then add rice and stir until it boils. Lower temperature and simmer about 1 hour.
