CREAM OF BROCCOLI SOUP 
6 tbsp. butter
1 tbsp. finely chopped onion
5 tbsp. flour
1 c. chicken broth or 1 c. water and 1 tsp. chicken consomme granules
2 c. milk
1/2 tsp. salt
Dash pepper
Dash nutmeg
1 (10 oz.) frozen chopped broccoli

Thaw broccoli and cook until stems are tender. Drain, reserve cooking liquid. Puree in blender. Set aside. Cook butter and onion until onion is tender. Blend in flour. Gradually add broth, milk, salt, pepper and nutmeg. Cook uncovered until soup is lightly thickened, stirring occasionally. Add broccoli plus 1/3 cup of cooking liquid. Heat and serve.
