BROCCOLI ALMOST SOUFFLE 
1/4 c. onion, chopped
1/4 c. butter
2 tbsp. flour
1/2 c. water
8 oz. jar Cheez Whiz
2 pkg. chopped frozen broccoli, thawed
3 eggs, beaten
3/4 c. crushed Ritz crackers
2 tbsp. melted butter
Grated Parmesan cheese

Saute onion in butter until soft. Stir in flour. Add water. Cook until thickened. Add Cheez Whiz. Blend until smooth. Remove from heat. Add well drained broccoli. Stir in eggs. Pour into casserole. Top with combined cracker crumbs, butter and Parmesan cheese. Bake at 325 degrees for 40 minutes.
