FRENCH-FRIED ONION RINGS 
2 lg. Spanish onions
2 1/4 c. all purpose flour, divided
1 1/4 tsp. baking powder
1 1/4 tsp. salt
1/4 tsp. white pepper
2 c. buttermilk
1 1/2 tbsp. vegetable oil
2 eggs, separated
Vegetable oil

Peel onions; cut into 1/2 inch slices, and separating into rings. Place in a plastic or paper bag, and add 1 cup flour. Shake bag until onion slices are coated.

Combine remaining 1 1/4 cups flour, baking powder, and next 4 ingredients; stir in egg yolks, mixing well. Beat egg whites (at room temperature) until stiff peaks form; fold into batter. Dip onion rings into batter. Pour oil to depth of 2 to 3 inches into a dutch oven; heat to 375 degrees. Fry, turning once, until golden brown. Drain on paper towels, and serve immediately. Yield: 4 servings.
