FISH CHOWDER 
1 lg. onion, chopped
2 oz. butter
2 tsp. salt
1/2 tsp. basil
1/2 tsp. tarragon
1/4 tsp. pepper
2 c. water
4 c. cubed potatoes
1 lb. frozen cod or haddock
16 oz. can cream style corn
12 oz. can evaporated milk

Saute onion in butter until soft; add potatoes, seasonings and water. Cover and simmer 15 minutes. Cut partially thawed fish into chunks; place on top of potatoes. Cover again and simmer 15 minutes more or until fish flakes and potatoes are tender. Stir in corn and milk and heat just until boiling. You may add bacon, ham, parsley or white wine. Serves 8.
