1 sm. ripe avocado, peeled and cubed
3/4 c. powdered cream substitute
3/4 c. boiling water
2 tbsp. lemon juice
1/4 tsp. salt
1/4 tsp. ginger

Place all ingredients in blender. Cover and blend on high speed for about 20 seconds. Stop blender. Scrape down sides of container. Cover and run a few more seconds until mixture is smooth and creamy. Makes 1 1/2 cups dressing.
