CHICKEN - RICE LOAF 
3 1/2-4 c. cooked, diced chicken
2 c. soft bread crumbs
1 c. cooked rice
2 tsp. salt
1 (4 oz.) can pimento, diced
1/4 c. green pepper, diced
1 c. chicken broth
1 c. coffee cream
4 eggs, beaten
Serve with Mushroom Gravy

Combine ingredients, mixing lightly. Pack into well greased 9 x 5 x 2 3/4 inch loaf pan. Bake 1 1/4 hours at 325 degrees or until firm.

MUSHROOM GRAVY:

1/2 c. butter
1/4 c. sifted flour
2 c. cold chicken broth
1 (4 oz.) can mushrooms, drained
1/4 tsp. paprika
1 tsp. lemon juice
1/4 c. cream

Melt butter, blend in flour. Stir in broth and remaining ingredients, stirring until thickened.
