FILLINGS FOR 2-LAYER CAKES 
1/3 c. sugar
2 tbsp. flour
1 egg
3/4 c. milk
2 tbsp. butter
1/2 tsp. vanilla

In top section of double boiler combine all ingredients except vanilla. Cook over boiling water, stirring constantly 10 minutes or until thickened. Remove from heat and add vanilla. Beat with rotary beater. Cool.

Almond Cream: Use 1/2 tsp. almond extract.

Butterscotch: Use 1/2 cup brown sugar, firmly packed instead of 1/3 cup sugar.

Chocolate: Cook 1 oz. cake unsweetened chocolate, cut up, with filling ingredients.
