Fish, fillet 1/4 lb. butter 1 tbsp. lemon juice 1 tbsp. white wine Salt and pepper to taste Paprika, optional Romano cheese, grated Salt and pepper fish, heat oven to 450 degrees. Put butter in shallow pan and brown in oven. Place fish, skin side down, in hot butter and return to oven for 10 to 15 minutes. Turn fish over and baste with juice. Sprinkle with lemon juice, wine, cheese and paprika. Return to oven for 5 more minutes. Can be run under broiler for a minute after basting. Serve with sauce that it has been cooked in. This is good with any fish. Sizzling browned butter gives it a better taste. |
