BAKED FLOUNDER WITH CAPERS 
2 (2 1/2 lbs.) fresh or frozen thawed flounder fillets
1 tsp. salt
1/8 tsp. pepper
1 can (4 oz.) sliced mushrooms, drained
3 tbsp. butter, melted
3 tbsp. lime or lemon juice
2 tbsp. capers in vinegar, drained
Parsley sprigs and tomato wedges, optional

1. Preheat oven to 400 F. Lightly grease a shallow baking pan or oven-proof serving dish.

2. Sprinkle fish fillets with salt and pepper. Place skin-side down in baking dish.

3. Combine mushrooms, butter and lime juice; pour over flounder. Bake for about 30 minutes, until fish flakes easily.

4. Just before serving sprinkle with capers. Garnish with parsley sprigs and tomato wedges if desired. Makes 5-6 servings.
