RASPBERRY CORDIAL | |
4 c. fresh raspberries or frozen loose-pack unsweetened, thawed (20 oz.) 2 c. sugar 1 1/2 c. quality vodka 1 tsp. whole cloves 1 tsp. whole allspice 1. In a large bowl, crush berries. 2. Stir in sugar, vodka and spices. Stir to dissolve sugar as much as possible. 3. Pour mixture into a 2 quart jar. Cover and age at room temperature for 2 to 4 weeks, shaking jar gently every few days. 4. After the ageing time, strain the cordial through cheese cloth twice, discarding pulp and spices. 5. Pour cordial into small decorative bottles. Seal and label. 6. Depending on the season, serve at room temperature, heating gently, or ice cold from the refrigerator. |
