EGGPLANT BAKE 
3/4 c. seasoned bread crumbs
1 tsp. dried oregano leaves
1/2 tsp. garlic powder
1 med. eggplant (about 1 1/2 to 2 lbs.) pared and cut into 1/2 inch slices
1 or 2 eggs, beaten
1 jar pizza sauce
Parmesan cheese

Mix first 3 ingredients together. Dip eggplant in beaten egg, then in bread crumb mixture. Place in single layer in greased cookie sheet. Spread with pizza sauce, sprinkle with Parmesan cheese. Bake 20 to 30 minutes or until done. 4 to 6 servings.
