PINEAPPLE EMPANADAS 
1 (8 oz.) pkg. cream cheese, softened
3 sticks butter, softened
3 c. flour
1 jar pineapple preserves
3/4 c. sugar

Combine cheese, butter and flour into dough. Roll out thin and cut out circles - 3 inches in diameter. Fill each circle with one teaspoon preserves. Fold in half and seal edges well with a fork. Glaze top of the crust with small amount of preserve and sprinkle with granulated sugar. Bake 15 to 20 minutes or until golden brown at 350 degrees.
