CHINESE ALMOND COOKIES | |
2 3/4 c. all-purpose flour, sifted 1 c. sugar 1/2 tsp. salt 1/2 tsp. baking soda 1 c. butter 1 egg, slightly beaten 1 tsp. almond extract 1/3 c. almonds Preheat oven to 325 degrees. Sift together flour, sugar, salt and soda. Cut in butter until mixture resembles cornmeal. Add egg and almond extract. Mix well. Shape into 1 inch balls and place 2 inches apart on cookie sheet. Place an almond on each cookie and press down slightly to flatten. Bake at 325 degrees for 15 to 18 minutes. |
