PINEAPPLE CASSEROLE 
2 lg. cans chunk pineapple, drained (save juice)
5 tbsp. cornstarch
1 to 1 1/2 c. grated Cheddar cheese
1 c. sugar
1 stick melted butter
1 c. Ritz cracker crumbs

Place pineapple and cheese in deep baking dish. Mix sugar, cornstarch, and juice and heat until thickened. Pour over pineapple and cheese and mix well. Top with cracker crumbs and pour butter on top. Bake at 350 degrees for 30 minutes.
