VIDALIA ONION PIE 
1 lb. sweet vidalia onions, sliced thin
1/3 stick butter
2 tbsp. butter
2 tbsp. flour
1 c. milk
1/2 c. cheddar cheese, grated
15 to 20 buttery Ritz crackers, crumbled

Saute onions in 1/3 stick butter. Set aside. Make white sauce by combining 2 tablespoons butter, flour and milk. Add cheese and stir until melted. Spread cracker crumbs on bottom and sides of pie plate and pour onions on top. Pour sauce over onions. Spread evenly. Bake at 350 degrees until bubbling.
