SOUR CREAM POTATO CASSEROLE 
5 med. potatoes or 4 c. sliced cooked potatoes
2 tbsp. butter
1/2 c. finely chopped onion
1/2 c. dry bread crumbs
1/4 c. grated American cheese
2 well beaten eggs
1 c. sour cream
1 tsp. salt
Dash of pepper

Cook potatoes in boiling, salted water until tender; drain, peel, cool and cut in thin slices. Melt butter; add onion and cook until tender but not brown. Put potatoes in 1 quart casserole. Sprinkle onion, bread crumbs and cheese over. Combine eggs, sour cream, salt, and pepper; pour mixture over potatoes. Top with additional grated cheese, if desired. Bake in moderate oven (350 degrees) 15-20 minutes. Makes 5-6 servings.
