DELLA'S MEXICAN FRUITCAKE 
2 c. flour
2 eggs
2 c. sugar
2 tsp. baking soda
1 can (20 oz.) crushed pineapple, juice and all
1 c. nuts

Mix together and bake in 9x13 pan for 35 minutes at 350 degrees.

Ice top with: 1 c. powdered sugar 3 oz. softened cream cheese 1 tsp. vanilla

(I prefer to use 1 1/2 times this recipe to ice the cake.)

My cousin Della in Phoenix, AZ gave me this recipe. I took the cake to a church choir get-together and am submitting it to the church cookbook by popular request as a result.
